  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (15g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional toppings: sliced banana, chopped peanuts, dark chocolate chips, extra peanut butter drizzle, cinnamon

Instructions

  1. In a small bowl, combine the rolled oats, chia seeds, protein powder, and a pinch of sea salt. Stir together to evenly distribute the protein powder.
  2. In a separate bowl or directly in your mason jar, whisk together the milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract until smooth. If peanut butter is thick, microwave for 10 seconds first.
  3. Pour the dry oat mixture into the wet ingredients. Stir well with a spoon or spatula until everything is combined, ensuring no dry pockets remain.
  4. Divide the mixture evenly between mason jars or airtight containers, leaving about an inch of space at the top.
  5. Seal the jars and refrigerate for at least 6 hours, or up to 5 days. The oats will absorb the liquid and thicken into a creamy, pudding-like texture.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, chopped peanuts, a drizzle of extra peanut butter, and a sprinkle of cinnamon if desired. Serve cold or at room temperature.

Notes

Mix protein powder with dry oats first to prevent clumps. Let peanut butter come to room temperature for easier mixing. Use a whisk for smoother texture. Taste before refrigerating to adjust sweetness. Don’t overfill jars; leave space for toppings. Make a double batch for meal prep.
