Description

This creamy garlic parmesan chicken and rice is a one-pot comfort food that comes together in under an hour. Juicy chicken thighs, tender Arborio rice, and a velvety garlic-parmesan sauce make for a satisfying weeknight dinner with minimal cleanup.

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1.5 cups Arborio rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Pat the chicken dry and season generously with salt and black pepper.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the chicken thighs for 4-5 minutes per side until golden brown. Transfer to a plate and set aside.
  3. Reduce heat to medium. Add butter to the pot and scrape up any browned bits. Add minced garlic and cook for 30-60 seconds until fragrant.
  4. Add Arborio rice and stir to coat. Cook for 1-2 minutes until the rice is slightly translucent and smells nutty.
  5. Pour in chicken broth, dried thyme, and dried rosemary. Stir and bring to a gentle boil. Reduce heat to low and simmer for 5 minutes, stirring occasionally.
  6. Nestle the seared chicken thighs back into the pot, including any accumulated juices. Cover with a tight-fitting lid and simmer on low for 20 minutes. Do not lift the lid.
  7. Remove the lid. Stir in heavy cream and freshly grated Parmesan cheese until melted and creamy.
  8. Remove from heat, cover, and let rest for 5 minutes.
  9. Garnish with fresh parsley and serve hot.

Notes

For best results, use freshly grated Parmesan and let the cream come to room temperature before adding. If the rice seems undercooked after 20 minutes, add an extra ¼ to ½ cup of broth and cook for 5-10 more minutes. Leftovers can be stored in the refrigerator for up to 4 days and taste even better the next day.
