Description
A cozy and creamy white chicken chili made in the crockpot without cream cheese, using blended white beans and Greek yogurt for a light yet rich texture. Perfect for easy weeknight dinners.
Ingredients
- 1.5 pounds boneless, skinless chicken breasts
- Two 15-ounce cans white beans (cannellini or Great Northern), drained and rinsed
- 3 cups low sodium chicken broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 4-ounce can diced green chilies
- 1 small jalapeño, seeded and finely chopped (optional)
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- Juice of 1 lime
- ½ cup plain Greek yogurt (full-fat or 2%)
- Small handful fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Dice the onion and mince the garlic. If using jalapeño, remove seeds and finely chop. Drain and rinse the white beans thoroughly. (5 minutes)
- Add chicken breasts to the bottom of the slow cooker. Layer diced onion, minced garlic, green chilies, jalapeño, and spices (cumin, chili powder, oregano) on top. Pour in chicken broth gently. (5 minutes)
- Cover and cook on low for 5 to 6 hours, or until chicken is tender and shreds easily. (5-6 hours)
- Using two forks, shred the chicken directly in the crockpot. (5 minutes)
- Scoop out about 1.5 cups of the bean and broth mixture into a blender or use an immersion blender in the crockpot. Puree until smooth, then stir back into the pot. (5 minutes)
- Stir in ½ cup plain Greek yogurt and juice from one lime. Mix gently to combine. Taste and adjust salt and pepper as needed. (5 minutes)
- Let chili sit on warm for 10 minutes before serving to let flavors meld. Garnish with chopped fresh cilantro. (10 minutes)
Notes
If chili is too thick, add more broth or water to reach desired consistency. If too thin, cook uncovered for 15-20 minutes to reduce. Blending some beans is key for creamy texture without cream cheese. Let chicken rest in broth before shredding for better flavor absorption. Start with less salt and adjust at the end. Slow cooker liners help with cleanup.
