Creamy Crockpot Queso Blanco Dip with Crispy Chorizo

  • Author: zack
  • Total Time: 1 hour 45 minutes
  • Yield: 8 servings 1x

Description

A creamy, cheesy queso blanco dip slow-cooked in a crockpot and topped with crispy chorizo, perfect for parties and casual gatherings.

Ingredients

Scale
  • 16 ounces queso blanco cheese, cubed or grated
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 4 ounces canned green chiles, diced
  • 8 ounces chorizo sausage, casing removed
  • 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat a skillet over medium heat. Add the chorizo and cook, breaking it up with a spatula, until crispy and browned, about 8-10 minutes. Transfer to a paper towel-lined plate to drain excess fat. Set aside.
  2. Place the cubed or grated queso blanco into the crockpot. Pour in heavy cream and whole milk. Stir gently to combine. If cheese is cold, let soften a few minutes before mixing.
  3. Stir in diced canned green chiles, garlic powder, onion powder, ground cumin, salt, and black pepper. Mix until evenly distributed.
  4. Cover and cook on low for about 1.5 to 2 hours, stirring every 30 minutes until cheese melts into a silky, creamy sauce. Alternatively, cook on high for 45 minutes, stirring more frequently.
  5. Taste and adjust seasoning if needed. If dip is too thick, stir in a splash of milk to loosen.
  6. Spoon the hot dip into a serving bowl and sprinkle the crispy chorizo evenly over the top. Garnish with chopped fresh cilantro and optional squeeze of fresh lime juice.

Notes

Cook chorizo separately to get crispy texture and avoid greasy dip. Stir dip every 30 minutes to prevent sticking and ensure even melting. Keep crockpot on warm during serving to maintain consistency. For dairy-free, substitute queso blanco with vegan melting cheese and heavy cream with coconut cream. For vegetarian, omit chorizo and add sautéed mushrooms or roasted peppers.
