A comforting and fuss-free crockpot chicken dish smothered in a creamy, flavorful Parmesan sauce, perfect for busy weeknights or cozy dinners.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
- 1 cup freshly grated Parmesan cheese (about 100g)
- 1 cup heavy cream (240ml)
- 1/2 cup chicken broth (120ml)
- 1/3 cup sun-dried tomatoes, chopped (packed in oil)
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning (oregano, basil, thyme, rosemary blend)
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons unsalted butter, softened (about 30g)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning. (5 minutes)
- In a bowl or measuring jug, combine heavy cream, chicken broth, minced garlic, chopped sun-dried tomatoes, red pepper flakes, and softened butter. Stir until combined. (3 minutes)
- Place the seasoned chicken breasts in the bottom of the crockpot in a single layer. Pour the creamy sauce mixture over the chicken, distributing garlic and sun-dried tomatoes evenly. (2 minutes)
- Cover and cook on low for 4-5 hours, or until chicken is tender and cooked through (internal temperature 165°F / 74°C). Avoid lifting the lid during cooking. (4-5 hours)
- About 15 minutes before serving, sprinkle freshly grated Parmesan cheese over the chicken and gently stir into the sauce. Replace lid and let melt and thicken slightly. (15 minutes)
- Taste the sauce and adjust salt and pepper as needed. Garnish with chopped fresh basil or parsley before serving. (2 minutes)
- If sauce is too thin, whisk in a slurry of cornstarch and water and cook on high for 10-15 minutes until thickened.
Notes
Use freshly grated Parmesan for best sauce texture. Avoid lifting the crockpot lid during cooking to maintain heat. Sauce can be thickened with cornstarch slurry if needed. Prepping sauce the night before saves time. Can substitute chicken thighs or use vegetarian alternatives like portobello mushrooms or cauliflower steaks. For dairy-free, use coconut cream and nutritional yeast.
