  • 4 cups russet potatoes, peeled and diced into ½-inch cubes
  • 4 cups chicken broth (low-sodium preferred)
  • 8 oz cream cheese, softened and cubed
  • 1 packet ranch seasoning mix
  • 2 cups shredded cheddar cheese (sharp cheddar adds the most flavor)
  • Crumbled cooked bacon (optional, for topping)
  • Diced pickles or pickle relish (optional, for topping)
  • Diced tomatoes (optional, for topping)
  • Chopped green onions (optional, for topping)
  • Extra shredded cheddar (optional, for topping)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until fully browned (about 6-8 minutes). Drain excess fat, leaving about a tablespoon for flavor. Transfer the beef to your slow cooker.
  2. Add the diced potatoes and chicken broth to the slow cooker with the beef. Stir to combine. The broth should just barely cover the potatoes; if not, add a little more.
  3. Sprinkle the ranch seasoning packet over the top and stir it in.
  4. Cook on low for 3-4 hours or on high for 1.5-2 hours, until the potatoes are fork-tender.
  5. Once the potatoes are tender, add the cubed cream cheese. Stir until fully melted and incorporated (about 2-3 minutes).
  6. Stir in the shredded cheddar cheese until melted and the soup is smooth and creamy. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve hot with desired toppings: bacon, pickles, tomatoes, green onions, and extra cheddar.

Notes

For best results, use room temperature cream cheese to avoid lumps. Brown the beef first for deeper flavor. If soup is too thick, stir in a splash of milk or additional broth. If too thin, cook with lid off for 15-20 minutes to reduce. For a low-carb version, substitute potatoes with cauliflower florets.
