Ingredients
Scale
- 2 cups cooked, shredded chicken (from about 2 medium chicken breasts or a rotisserie chicken)
- 8 oz cream cheese, softened
- 1/2 cup buffalo wing sauce (like Frank’s RedHot)
- 1/2 cup ranch dressing
- 1/2 cup blue cheese crumbles
- 1/4 cup sour cream
- 1 tbsp ranch seasoning mix (dry packet)
- Salt and black pepper to taste
- Optional: 1/4 cup chopped green onions for garnish
Instructions
- Prep the chicken: If using raw chicken breasts, place them in a pot, cover with water, and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until internal temperature reaches 165°F. Let cool slightly, then shred with two forks. You should have about 2 cups. If using a rotisserie chicken, just pull the meat off the bones and shred.
- Soften the cream cheese: Cut the cream cheese into cubes and let it sit at room temperature for 20-30 minutes. If in a rush, microwave in a bowl for 10-15 seconds on low power. You want it soft but not melted.
- Mix the base: In a medium mixing bowl, combine the softened cream cheese, buffalo wing sauce, ranch dressing, sour cream, and ranch seasoning mix. Stir until smooth and well combined.
- Layer in the slow cooker: Spray the inside of your slow cooker with non-stick cooking spray. Add the shredded chicken to the bottom, then pour the cream cheese mixture over the top. Stir gently to coat the chicken evenly.
- Cook on low: Cover and cook on low for 2 hours. Do not cook on high. After 1 hour, give it a good stir to help everything melt together.
- Add the blue cheese: After 2 hours, stir in 1/4 cup of the blue cheese crumbles. Reserve the remaining 1/4 cup for topping.
- Finish and garnish: Let the dip cook for another 15-20 minutes on low. The top should be bubbly and the edges slightly golden. Sprinkle the reserved blue cheese crumbles and chopped green onions on top right before serving.
- Serve warm: Switch the slow cooker to the ‘warm’ setting and serve directly from the pot.
Notes
Don’t overcook the dip; 2 hours on low is the sweet spot. Shred the chicken finely for best texture. Stir at least once during cooking. Let the dip rest for 10-15 minutes before serving to thicken. Use a slow cooker liner for easy cleanup.
