  • 2 cups cooked, shredded chicken (from about 2 medium chicken breasts or a rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (like Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1/2 cup blue cheese crumbles
  • 1/4 cup sour cream
  • 1 tbsp ranch seasoning mix (dry packet)
  • Salt and black pepper to taste
  • Optional: 1/4 cup chopped green onions for garnish

Instructions

  1. Prep the chicken: If using raw chicken breasts, place them in a pot, cover with water, and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until internal temperature reaches 165°F. Let cool slightly, then shred with two forks. You should have about 2 cups. If using a rotisserie chicken, just pull the meat off the bones and shred.
  2. Soften the cream cheese: Cut the cream cheese into cubes and let it sit at room temperature for 20-30 minutes. If in a rush, microwave in a bowl for 10-15 seconds on low power. You want it soft but not melted.
  3. Mix the base: In a medium mixing bowl, combine the softened cream cheese, buffalo wing sauce, ranch dressing, sour cream, and ranch seasoning mix. Stir until smooth and well combined.
  4. Layer in the slow cooker: Spray the inside of your slow cooker with non-stick cooking spray. Add the shredded chicken to the bottom, then pour the cream cheese mixture over the top. Stir gently to coat the chicken evenly.
  5. Cook on low: Cover and cook on low for 2 hours. Do not cook on high. After 1 hour, give it a good stir to help everything melt together.
  6. Add the blue cheese: After 2 hours, stir in 1/4 cup of the blue cheese crumbles. Reserve the remaining 1/4 cup for topping.
  7. Finish and garnish: Let the dip cook for another 15-20 minutes on low. The top should be bubbly and the edges slightly golden. Sprinkle the reserved blue cheese crumbles and chopped green onions on top right before serving.
  8. Serve warm: Switch the slow cooker to the ‘warm’ setting and serve directly from the pot.

Notes

Don’t overcook the dip; 2 hours on low is the sweet spot. Shred the chicken finely for best texture. Stir at least once during cooking. Let the dip rest for 10-15 minutes before serving to thicken. Use a slow cooker liner for easy cleanup.
