Ingredients
- 6 ounces breakfast sausage (bulk or small links), browned and crumbled
- 4 large eggs, beaten

- 4 flour tortillas, 10-inch (25 cm), warmed
- 1 tablespoon (14 grams) butter or oil for cooking
- 2 tablespoons (30 ml) milk or cream (optional)

Instructions
- Heat a skillet over medium heat and add the sausage. If using bulk sausage, crumble it with a spatula. Cook for 6-8 minutes until browned and cooked through with no pink spots. Transfer to a plate lined with paper towels to drain excess grease.
- In a mixing bowl, whisk the eggs with milk or cream (if using), salt, and pepper until fully combined and slightly frothy.
- Wipe the skillet clean and melt butter over medium-low heat. Pour in the eggs and let them sit for 10-15 seconds until they start to set at the edges.
- Using a spatula, gently fold the eggs from the edges toward the center, forming soft curds. Continue folding until eggs are mostly cooked but still slightly creamy, about 3-4 minutes.
- Remove from heat and immediately stir in shredded cheddar cheese until melted and combined.
- Warm each tortilla in a dry skillet over medium heat for about 20 seconds per side or microwave wrapped in a damp paper towel for 15-20 seconds until soft and pliable.
- Lay a warm tortilla flat. Spoon an even amount of scrambled eggs with cheese in the center, then top with browned sausage.
- Fold the sides of the tortilla in, then roll from the bottom up, tucking in the filling as you go to form a snug wrap.
- Optional: Place the burrito seam-side down in a warm skillet and cook for 1-2 minutes to crisp the outside and seal the edges.
- Slice in half if desired and serve with salsa or hot sauce.
