  • 1 ½ cups (190 grams) all-purpose flour
  • 1 teaspoon baking soda

  • ½ cup (60 grams) chopped walnuts, pecans, or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps (about 1 ½ cups).
  3. Pour the melted butter over the mashed bananas and stir until combined.
  4. Add the sugar and stir vigorously for about 30 seconds. Then add the egg and vanilla extract, stirring until smooth and creamy.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Fold gently with a spatula or wooden spoon until just combined (10 to 15 strokes). Do not overmix.
  6. If using, fold in the optional mix-ins (nuts or chocolate chips) gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely (about 1 hour) before slicing.

Notes

Use overripe bananas with brown spots for best sweetness and moisture. Do not overmix the batter to avoid dense bread. Let the bread cool completely before slicing to prevent crumbling. For extra moisture, add 1 tablespoon of sour cream or yogurt with the wet ingredients.
