  • 6 medium Honeycrisp or Granny Smith apples (about 2 lbs or 900g), peeled, cored, and sliced into 1/4-inch thick wedges
  • 2 tablespoons (30g) unsalted butter
  • 2 tablespoons (25g) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon (8g) all-purpose flour
  • 1 tablespoon (15ml) lemon juice
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (40g) rolled oats
  • 1/2 cup (100g) brown sugar, packed
  • 1/2 cup (113g) cold unsalted butter, cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and butter your baking dish.
  2. Make the Miso Caramel: In a medium saucepan over medium heat, melt the 1/2 cup granulated sugar, stirring constantly with a wooden spoon. It will clump at first—keep stirring until it melts into a deep amber liquid, about 5-7 minutes. Immediately add the 3 tablespoons butter and whisk until melted.   4. Make the Crumble Topping: In a large mixing bowl, whisk together 1 cup flour, 1/2 cup oats, 1/2 cup brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Add the cold butter cubes. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter lumps.

Notes

For the apples, Honeycrisp are recommended for natural sweetness and firm texture. White miso is key—it’s milder than red or brown miso.
