  • 4 tablespoons (56g) unsalted butter
  • 3 tablespoons (45ml) pure maple syrup
  • 1 teaspoon chopped fresh thyme leaves (optional)
  • Pinch of sea salt
  • Freshly ground black pepper, to taste
  • Optional: squeeze of fresh lemon juice
  • Optional: pinch of chili flakes

Instructions

  1. Peel and cut 1 pound (450g) of carrots into evenly sized sticks or rounds, about 1/4 to 1/2 inch thick.
  2. In a large skillet over medium heat, melt 4 tablespoons (56g) of unsalted butter. Stir frequently as it foams and turns golden brown with a nutty aroma, about 3-5 minutes. Remove from heat immediately to prevent burning.
  3. Return skillet to medium heat and add the carrots to the browned butter. Toss well to coat.
  4. Drizzle 3 tablespoons (45ml) of pure maple syrup over the carrots. Stir to combine and cook, stirring occasionally, for 10-12 minutes until carrots are tender but still slightly firm.
  5. Sprinkle 1 teaspoon chopped fresh thyme, a pinch of sea salt, and freshly ground black pepper to taste. Toss gently to mix.
  6. Optionally add a squeeze of fresh lemon juice or a pinch of chili flakes. Cook for another minute, then remove from heat.
  7. Serve warm immediately.

Notes

Use a light-colored pan to easily monitor the butter browning stage. Add a splash of water or broth if carrots start sticking or glaze thickens too much. Fresh thyme is preferred but dried thyme can be used at half the amount. For a dairy-free version, substitute butter with vegan butter or coconut oil. Leftovers keep well refrigerated for up to 3 days and reheat gently with a splash of liquid.
