Description

This isn’t just another banana bread recipe. It’s the one that makes you close your eyes after the first bite. Fudgier, nuttier, and more satisfying than any version you’ve ever tried.


Ingredients

  • 3 large ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chunks
  • 1/2 cup walnuts, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line your loaf pan with parchment paper, leaving some overhang on the sides.
  2. In a large bowl, mash the ripe bananas with a fork until smooth. A few lumps are fine.
  3. Add the melted butter, sugar, eggs, and vanilla extract to the mashed bananas. Whisk until well combined and glossy.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold gently until just combined. Do not overmix.
  6. Gently fold in the chocolate chunks and chopped walnuts. Reserve a handful of each to sprinkle on top.
  7. Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle the reserved chocolate and walnuts on top.
  8. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment paper and transfer to a cooling rack. Let it cool completely before slicing.

Notes

Don’t overmix the batter. Check your oven temperature. Toast walnuts for extra flavor. The flavor improves after a day.
