Description
These individual charcuterie grazing cups are the perfect no-fuss appetizer for Friendsgiving. With salty prosciutto, creamy brie, tart dried cranberries, and crunchy candied pecans, they come together in just 15 minutes and are endlessly customizable.
Ingredients
- 4 ounces prosciutto (about 8 thin slices)
- 4 ounces salami (about 12 thin slices)
- 4 ounces brie cheese
- 4 ounces sharp cheddar cheese
- 2 ounces goat cheese (optional)
- 1/2 cup dried cranberries
- 1/2 cup dried apricots (about 6–8 apricots, quartered)
- 1/4 cup honey
- 1/2 cup candied pecans
- 1/2 cup crunchy crackers (such as Ritz or Club crackers)
- 1/4 cup pretzel sticks
- 1/2 cup fresh grapes (halved, optional)
- 2–3 fresh figs (quartered, optional)
- Fresh rosemary sprigs (optional)
- Fresh thyme sprigs (optional)
Instructions
- Prep your ingredients: Let cheese sit at room temperature for about 10 minutes. Wash and halve grapes if using. Cut brie into 1-inch cubes. Cut cheddar into 1/2-inch cubes. Quarter dried apricots. Tear prosciutto slices into 2-3 pieces each. Fold salami slices into rose shapes or quarter them.
- Assemble the cups: Arrange 6-8 small cups (5-ounce size) on a serving tray. Start with heavier ingredients at the bottom. Add a small handful of crackers (3-4, broken if large) to each cup. Add a few cubes of brie and cheddar. Tuck in prosciutto pieces and a salami rose. Add dried cranberries and apricot quarters. Sprinkle in candied pecans and pretzel sticks. If using grapes or figs, tuck them in around the edges.
- Add finishing touches: Drizzle a tiny bit of honey over the cheese in each cup. If using goat cheese, crumble a small amount on top. Tuck a fresh rosemary sprig into each cup, letting it stick out slightly. Add a tiny sprig of fresh thyme if desired. Serve immediately or refrigerate for up to 24 hours (add honey and herbs just before serving).
Notes
For best flavor, let ingredients come to room temperature before assembling. If making ahead, leave off honey and fresh herbs until just before serving to prevent sogginess. Customize cups for dietary needs: for vegetarian, skip meats and double cheese; for dairy-free, use vegan cheese; for gluten-free, use gluten-free crackers and pretzels. Each cup should have about 3-4 bites worth of each element.
