Description

A simple, creamy white chicken chili made in a crockpot, perfect for cozy dinners for two with minimal prep and wholesome ingredients.

  • 1 large boneless skinless chicken breast (68 ounces)
  • 1 can (15 ounces) white beans (cannellini or great northern), drained and rinsed
  • 1 ½ cups low-sodium chicken broth
  • 1 can (4 ounces) diced green chilies
  • ½ small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • Pinch of salt
  • Pinch of freshly ground black pepper
  • 2 ounces cream cheese, softened
  • Optional garnishes: fresh cilantro, shredded cheese, lime wedges

Instructions

  1. Finely chop ½ small yellow onion and mince 2 garlic cloves. Drain and rinse the white beans. Open the can of diced green chilies and set aside.
  2. Place the chicken breast at the bottom of the crockpot. Sprinkle the chopped onions and minced garlic evenly over the chicken.
  3. Add the drained beans, diced green chilies, and chicken broth to the crockpot.
  4. Sprinkle ground cumin, chili powder, dried oregano, salt, and black pepper over the ingredients.
  5. Cover and cook on low for 4 to 5 hours until the chicken is tender enough to shred.
  6. Shred the chicken in the crockpot using two forks.
  7. Stir in the softened cream cheese until melted and fully incorporated.
  8. Taste and adjust seasoning with extra salt, pepper, or hot sauce if desired.
  9. Serve warm, garnished with fresh cilantro, shredded cheese, or a squeeze of lime.

Notes

Use fresh spices for best flavor. Soften cream cheese before adding for a smooth texture. Avoid opening the crockpot lid frequently during cooking. For dairy-free, substitute cream cheese with coconut milk or dairy-free cream cheese. Leftovers can be refrigerated for up to 3 days or frozen (without cream cheese) for up to 2 months.
