  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 large bunch lacinato kale, stems removed and leaves chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice (for finishing)

Instructions

  1. Sauté the aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion, carrots, and celery. Cook, stirring occasionally, until onion is translucent and vegetables have softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  2. Transfer the sautéed vegetables to a 6-quart slow cooker.
  3. Add the drained cannellini beans and undrained diced tomatoes to the slow cooker. Stir to combine.
  4. Pour in the vegetable broth. Add dried thyme, dried rosemary, bay leaf, salt, pepper, and red pepper flakes (if using). Stir until seasonings are evenly distributed.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until carrots are tender and flavors have melded.
  6. About 30 minutes before serving, stir in the chopped kale. Push it down into the hot liquid. Cover and cook for another 20-30 minutes until kale is tender but still has structure.
  7. Just before serving, remove the bay leaf. Stir in the lemon juice. Taste and adjust salt and pepper as needed.
  8. Ladle into bowls and serve hot. Optionally, top with Parmesan cheese or a drizzle of olive oil and serve with crusty bread.

Notes

For best flavor, do not skip the sauté step. Add kale only in the last 30 minutes to avoid it becoming slimy. Season gradually as broth and beans vary in salt content. The stew tastes even better the next day. If too thick, add a splash of broth; if too thin, mash some beans against the pot.
