  • 1 pound (450g) ground beef (80/20 preferred)
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 can (15 oz / 425g) corn, drained
  • 1 can (14.5 oz / 411g) diced tomatoes with green chilies
  • 4 cups (960ml) beef broth (low sodium optional)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning (chili powder, cumin, paprika, oregano, cayenne)
  • ½ cup (120ml) ranch dressing
  • Shredded cheddar cheese (optional, for topping)
  • Fresh cilantro, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink, about 5–7 minutes. Drain excess fat.
  2. Dice the onion and mince the garlic while the beef cooks.
  3. Transfer the browned beef to the crockpot. Add black beans, corn, diced tomatoes with green chilies, diced onion, and minced garlic.
  4. Pour in beef broth and add taco seasoning. Stir gently to combine.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  6. About 30 minutes before serving, taste and adjust seasoning with salt and pepper. Add more broth or water if soup is too thick.
  7. Just before serving, pour ranch dressing into the soup and gently stir to create creamy ribbons.
  8. Ladle soup into bowls and garnish with shredded cheddar cheese and chopped cilantro if desired.

Notes

Browning the beef before adding to the crockpot enhances flavor and texture. Add ranch dressing at the end to maintain its creamy texture. For thicker soup, mash some beans before adding ranch. Adjust seasoning carefully as store-bought taco seasoning varies in salt content. Can be made vegetarian by substituting beef with extra beans or sweet potatoes and using vegetable broth and vegetarian ranch.
