  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 6 cups beef broth (low-sodium preferred)
  • 1 cup dry white wine (optional)
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • 8 thick slices baguette
  • 2 cups (200 grams) shredded Gruyere cheese

Instructions

  1. Slice the onions thinly, about 1/8-inch thick.
  2. Optional: In a large skillet over medium heat, melt the butter and add the sliced onions. Cook, stirring occasionally, until golden brown and soft, about 20 minutes.
  3. Transfer onions to the crockpot. Add minced garlic, beef broth, dry white wine, Worcestershire sauce, thyme sprigs, and bay leaf. Stir gently to combine.
  4. Set crockpot to low and cook for 6-8 hours. Alternatively, cook on high for 3-4 hours if short on time.
  5. About 30 minutes before serving, remove thyme sprigs and bay leaf. Taste and season with salt and pepper as needed.
  6. Preheat oven broiler. Arrange baguette slices on a baking sheet and sprinkle shredded Gruyere generously over each slice.
  7. Broil for 2-4 minutes until cheese is bubbly and golden brown. Watch closely to avoid burning.
  8. Ladle hot soup into bowls and float one or two slices of Gruyere toast on top. Serve immediately.

Notes

For best flavor, sauté onions before slow cooking. Crack crockpot lid slightly during last hour to thicken broth if needed. Stir once or twice during cooking to prevent sticking. Adjust salt at the end due to broth saltiness. Prepare Gruyere toast just before serving to keep it crisp. Can substitute vegetable broth for vegetarian version and Swiss or mozzarella for Gruyere. For gluten-free, skip baguette or use gluten-free bread.
