These Cozy Cranberry Bliss Bars with White Chocolate Drizzle are a nostalgic holiday treat featuring a soft, cake-like shortbread base studded with tart cranberries and topped with a creamy white chocolate drizzle. Perfect for Christmas brunch, Thanksgiving dessert, or any cozy winter gathering.
Ingredients
- 1 cup (2 sticks or 226g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups (250g) all-purpose flour, spooned and leveled
- 1/2 teaspoon fine sea salt
- 1 1/2 cups (about 170g) fresh or frozen whole cranberries (if frozen, do not thaw)
- 1 cup (170g) good-quality white chocolate chips or chopped white chocolate
- 2 tablespoons (30ml) heavy cream or coconut cream (for dairy-free)
- 1/2 teaspoon coconut oil or vegetable oil (optional, for extra glossy finish)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides. Lightly grease the parchment with butter or nonstick spray.
- In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light, fluffy, and pale, about 3 to 4 minutes. Scrape down the sides of the bowl halfway through.
- Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and beat until combined.
- In a separate medium bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Do not overmix.
- Using a rubber spatula, gently fold in the cranberries until evenly distributed. If using frozen cranberries, fold them in straight from the freezer.
- Transfer the batter to the prepared pan and spread it evenly using the spatula. The batter will be thick and slightly sticky.
- Bake for 25 to 30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs. Start checking at 22 minutes.
- Let the bars cool in the pan on a wire rack for at least 30 minutes. Then lift them out using the parchment handles and let them cool completely on the rack.
- Once the bars are completely cool, make the drizzle. Place the white chocolate chips and heavy cream in a small microwave-safe bowl. Microwave in 20-second intervals, stirring well after each, until smooth and fully melted, about 60 to 90 seconds total. If using, stir in the coconut oil at the end.
- Using a fork or a small spoon, drizzle the melted white chocolate over the cooled bars in a back-and-forth motion. Let the drizzle set at room temperature for about 30 minutes, or refrigerate for 15 minutes.
- Use a sharp knife to cut the bars into squares. Wipe the knife clean between each slice for clean cuts.
Notes
For gluten-free version, swap all-purpose flour with a 1:1 gluten-free baking blend containing xanthan gum. For dairy-free, use vegan butter and coconut cream instead of heavy cream. Fresh cranberries are ideal when in season (October through December), but frozen whole cranberries work year-round—do not thaw before using. If using dried cranberries, rehydrate in hot water for 10 minutes and drain well. White chocolate is fussy; microwave in short bursts and avoid overheating to prevent seizing. For clean slices, chill bars for 20 minutes before cutting.
