Description
A warm and comforting casserole featuring shredded chicken and herb-flavored stuffing with a golden, crispy topping. Perfect for busy weeknights or cozy gatherings.
Ingredients
- 3 cups cooked chicken, shredded or chopped (leftover rotisserie chicken recommended)
- 1 box (6 ounces) herb-flavored stuffing mix (e.g., Stove Top)
- 1 ½ cups chicken broth (low sodium preferred)
- ½ cup sour cream
- 4 ounces cream cheese, softened
- 4 tablespoons unsalted butter, divided
- ¼ cup finely chopped onion
- 1 teaspoon garlic powder
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
- Optional crispy topping additions: ½ cup shredded cheddar cheese or toasted pecans
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the stuffing mix according to package directions, substituting chicken broth for water. Use 1 ½ cups chicken broth and 1 box (6 oz) stuffing mix. Set aside once done.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent and soft, about 5 minutes.
- In a medium bowl, combine the shredded chicken, sautéed onions, sour cream, cream cheese, garlic powder, parsley, salt, and pepper. Mix well until creamy and evenly combined.
- Fold in the prepared stuffing mix gently into the chicken mixture, ensuring the stuffing is evenly coated but not mushy.
- Transfer the mixture to your greased 9×13-inch baking dish, spreading it out evenly and pressing lightly to compact.
- For the crispy topping, melt the remaining 2 tablespoons of butter. Drizzle it over the top, then sprinkle with extra stuffing mix and, if desired, shredded cheddar cheese or toasted pecans.
- Bake uncovered for 30-35 minutes until the topping is golden brown and crispy and the casserole is bubbling around the edges.
- Let the casserole rest for 5-10 minutes before serving.
Notes
Use unsalted butter to control seasoning. Sauté onions for added sweetness and flavor. Be gentle when folding stuffing into the chicken mixture to avoid mushiness. Let casserole rest after baking for easier slicing. If topping browns too fast, tent with foil. Adding cheese halfway through baking prevents burning. Can substitute almond milk for broth or use gluten-free stuffing mix. For dairy-free, swap sour cream and cream cheese with alternatives.
