- 1 cup (226g) unsalted butter, browned
- 1 cup (200g) packed light brown sugar
- 1/4 cup (50g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 2 cups (240g) all-purpose flour
- 1/2 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- Optional: coarse sugar or cinnamon sugar for topping
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1 cup finely chopped peeled apple
- Optional: pinch of nutmeg or cardamom
Instructions
- Brown the butter in a skillet over medium heat for 5–7 minutes, stirring constantly until it foams and browns with a nutty aroma. Pour into a mixing bowl and let cool for 5 minutes.
- Add the light brown sugar and granulated sugar to the browned butter and whisk until combined and smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract until the batter lightens and thickens slightly.
- In a separate bowl, sift together the flour, baking soda, cinnamon, and salt.
- Gradually fold the dry ingredients into the wet mixture with a spatula until just combined, avoiding overmixing.
- Pour the batter into a greased or parchment-lined 9×13 inch baking pan and smooth the top. Optionally sprinkle coarse sugar or cinnamon sugar on top.
- Bake at 350°F (175°C) for 25–30 minutes until edges are golden and the center is set but still soft. A toothpick should come out with a few moist crumbs.
- Cool completely in the pan on a wire rack for about 30 minutes before slicing into bars.
Notes
Brown the butter carefully to avoid burning and bitterness. Measure flour by spooning and leveling to prevent dry, crumbly bars. Avoid overmixing to keep bars tender. Chill dough for 20 minutes if it spreads too much. Use fresh cinnamon for best flavor. Bars keep well at room temperature for 3 days and freeze up to 2 months.
