This cozy brown butter pecan pie cobbler is a quick and easy fall dessert that captures the essence of pecan pie without the fuss of a crust. It features a gooey, pudding-like bottom layer with a crisp, buttery topping, all enhanced by nutty brown butter.
Ingredients
- 1/2 cup (1 stick or 113g) unsalted butter, melted (for filling)
- 1 cup (200g) packed light brown sugar
- 1/2 cup (120ml) light corn syrup
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups (180g) pecan halves
- 1/4 cup (1/2 stick or 57g) unsalted butter (for browning)
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (120ml) whole milk
- 1/2 cup (1 stick or 113g) unsalted butter, melted (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
- Brown the butter for the filling: In a medium saucepan over medium heat, melt 1/4 cup (57g) of unsalted butter. Swirl the pan occasionally. After about 3-4 minutes, the butter will start to foam and turn a golden amber color. You’ll smell a nutty aroma. Immediately remove it from the heat and pour it into a heatproof bowl to stop the cooking.
- Make the pecan filling: In a large mixing bowl, whisk together the 1/2 cup (113g) of melted butter (not the browned butter yet), 1 cup (200g) packed light brown sugar, 1/2 cup (120ml) light corn syrup, 2 large eggs, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Whisk until smooth and well combined.
- Add the brown butter and pecans: Pour the browned butter into the filling mixture and stir gently. Then fold in 1 1/2 cups (180g) of pecan halves. Set aside.
- Prepare the cobbler topping: In a separate medium bowl, whisk together 1 cup (125g) all-purpose flour, 1/2 cup (100g) granulated sugar, 1 teaspoon baking powder, and 1/2 teaspoon salt. Make a well in the center and pour in 1/2 cup (120ml) whole milk. Stir until just combined — a few lumps are okay.
- Assemble the cobbler: Pour the batter into the prepared baking dish and spread it evenly with a spatula. Carefully spoon the pecan filling over the batter. Do not stir!
- Add the melted butter: Drizzle the 1/2 cup (113g) of melted butter evenly over the top. Do not stir.
- Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly around the edges. The center should be set but still slightly jiggly.
- Cool and serve: Let the cobbler cool on a wire rack for at least 20 minutes before serving. Serve warm, preferably with a scoop of vanilla ice cream or a drizzle of heavy cream.
Notes
The filling will look very liquidy when poured over the batter — that’s normal. Do not stir after adding the filling or melted butter. Let the cobbler cool for at least 20 minutes before serving to allow the filling to thicken. For best results, use room temperature eggs and fresh pecans.
