  • 1 sheet puff pastry, thawed

  • Pinch of salt
  • 1 egg, beaten with 1 tablespoon water (for egg wash)
  • 1 tablespoon coarse sugar (demerara or turbinado)
  • 1/2 cup unsalted butter, cubed (for caramel)
  • 1 cup brown sugar, packed (for caramel)
  • 1/2 cup heavy cream, room temperature (for caramel)
  • 1 teaspoon vanilla extract (for caramel)
  • 1/2 teaspoon flaky sea salt (for caramel)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven.
  2. Prepare the apples: Peel if desired, then core from the top, leaving the bottom intact to form a cup.
  3. Make the filling: In a small bowl, combine 2 tablespoons softened butter, 2 tablespoons brown sugar, 1/2 teaspoon cinnamon, and a pinch of salt. Mash into a paste.
  4. Fill the apples: Spoon the butter-sugar mixture into the hollowed centers of the apples.
  5. Prepare the puff pastry: On a lightly floured surface, roll out the thawed puff pastry to about 1/8 inch thick. Cut into two 6×6 inch squares.
  6. Wrap the apples: Place one filled apple in the center of each pastry square. Bring corners up to meet at the top, pinch seams firmly. Place seam-side down on a parchment-lined baking sheet, leaving at least 2 inches between dumplings.
  7. Apply egg wash: Brush the beaten egg mixture generously over each dumpling.
  8. Sprinkle with coarse sugar over the egg-washed pastry.
  9. Cut steam vents: Use a sharp knife to cut three small slits in the top of each dumpling.
  10. Bake for 35-40 minutes until deep golden brown and puffed. Tent with foil if browning too quickly.
  11. Make caramel sauce while dumplings bake: In a small saucepan over medium heat, melt 1/2 cup butter. Add 1 cup packed brown sugar, whisk until smooth. Let bubble for 2 minutes. Slowly pour in 1/2 cup heavy cream while whisking. Simmer 3-4 minutes until thickened. Remove from heat, stir in 1 teaspoon vanilla and 1/2 teaspoon flaky sea salt.
  12. Let dumplings rest on baking sheet for 5 minutes after baking.
  13. Serve warm: Place each dumpling on a plate, spoon warm caramel sauce generously over the top.

Notes

Don’t overwork the puff pastry; keep it cold for best puff. Space dumplings at least 2 inches apart on the baking sheet to avoid soggy bottoms. The caramel sauce thickens as it cools; reheat gently if needed. For best results, serve warm with vanilla ice cream.
