Classic Fantasy Fudge with Marshmallow Creme & Walnuts: Easy Recipe

  • Author: Sarah Wasserman
  • Total Time: 2 hours 24 minutes
  • Yield: 64 servings 1x

Description

This classic fantasy fudge with marshmallow creme and walnuts is creamy, rich, and studded with crunchy walnuts. It’s quick and easy to make, requiring only 20 minutes of active time and no candy thermometer.

Ingredients

Scale
  • 3 cups granulated sugar
  • 3/4 cup unsalted butter
  • 2/3 cup evaporated milk
  • 12 ounces semi-sweet chocolate chips
  • 1 jar (7 ounces) marshmallow creme
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment with butter.
  2. In a medium saucepan, combine sugar, butter, and evaporated milk. Cook over medium heat, stirring constantly, until butter is melted and sugar is mostly dissolved (about 3-4 minutes).
  3. Bring mixture to a full rolling boil. Let boil for exactly 4 minutes, stirring occasionally to prevent scorching. (If using a candy thermometer, aim for 234°F / soft-ball stage.)
  4. Remove from heat immediately. Add chocolate chips and marshmallow creme. Stir gently until chocolate is completely melted and mixture is smooth.
  5. Stir in vanilla extract and salt. Fold in chopped walnuts until evenly distributed.
  6. Pour mixture into prepared pan. Spread evenly with a spatula. Tap pan gently on counter to release air bubbles.
  7. Let fudge cool completely at room temperature (about 2-3 hours). Do not refrigerate.
  8. Once set, use parchment overhang to lift fudge out of pan. Place on cutting board and cut into 1-inch squares with a sharp knife, wiping knife clean between cuts.

Notes

For best results, do not refrigerate fudge while setting as it can cause graininess. If humidity is high, boil mixture for an extra 30 seconds. Fudge improves after a day or two. For nut-free version, omit walnuts and add 1/2 cup dried cranberries or cherries.
