This quick and easy black-eyed pea and collard green soup delivers rich, smoky flavor in just 30 minutes using canned peas and smoked turkey. It’s a comforting Southern tradition perfect for New Year’s Day or any cold winter night.

- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 large smoked turkey wings (about 1 pound)
- 6 cups low-sodium chicken broth
- 3 cans (15 ounces each) black-eyed peas, drained and rinsed
- 8 ounces collard greens, stems removed and leaves chopped
- 2 tablespoons apple cider vinegar
- 1 teaspoon salt (or to taste)
- ½ teaspoon freshly ground black pepper
- ½ teaspoon red pepper flakes (optional)
- 2 dried bay leaves
Instructions
- Prep your ingredients first. Dice the onion, mince the garlic, and chop the collard greens (if not pre-chopped). Rinse and drain the canned black-eyed peas.
- Heat the olive oil in a Dutch oven over medium heat. Add the diced onion and cook for 4-5 minutes, until soft and translucent.
- Add the minced garlic and cook for 1 minute more, until fragrant.
- Add the smoked turkey wings to the pot. Pour in the chicken broth, then add the bay leaves, black pepper, and red pepper flakes (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove the turkey wings carefully with tongs and set on a plate. Let cool slightly, then shred the meat off the bones, discarding skin and bones. Chop into bite-sized pieces.
- Return the shredded turkey meat to the pot. Add the rinsed black-eyed peas and chopped collard greens. Stir to combine.
- Bring the soup back to a gentle simmer and cook for 10-12 minutes, uncovered, stirring occasionally, until collards are tender and peas are heated through.
- Stir in the apple cider vinegar. Taste and adjust salt as needed.
- Remove the bay leaves and discard. Ladle into bowls and serve hot.
Notes
Don’t skip the apple cider vinegar—it brightens the greens. Salt in stages because smoked turkey adds salt. The soup tastes even better the next day. For a vegetarian version, omit turkey and use 6 cups vegetable broth plus 1 teaspoon liquid smoke.
