- 1.5 lbs salmon fillets, skin removed
- 1/3 cup honey
- 3 tablespoons low-sodium soy sauce
- 4 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 tablespoons avocado oil
- 2–3 green onions, sliced
- 1 tablespoon sesame seeds (optional)
- Salt and pepper to taste
Instructions
- Pat the salmon fillets completely dry with paper towels. Cut into 1.5-inch cubes. Season lightly with salt and pepper.
- In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and sesame oil. In a separate tiny bowl, mix cornstarch with 2 tablespoons of water until smooth.
- Heat a large non-stick skillet or cast iron pan over medium-high heat. Add avocado oil and heat until shimmering, about 2 minutes.
- Carefully place salmon cubes in the hot pan in a single layer (work in batches if needed). Cook undisturbed for 2-3 minutes until edges are golden and bottoms release easily.
- Flip each salmon bite and cook for another 2 minutes until the second side is golden and fish is just cooked through. Remove salmon from the pan and set aside.
- Reduce heat to medium-low. Pour the honey-garlic mixture into the same pan. Simmer for about 1 minute, stirring constantly.
- Stir the cornstarch slurry, then pour it into the pan while whisking continuously. Cook for 30 seconds until the sauce thickens into a glossy glaze.
- Return the seared salmon bites to the pan. Gently toss in the glaze until evenly coated, about 30 seconds.
- Transfer to a serving plate. Sprinkle with sliced green onions and sesame seeds. Serve hot over rice, noodles, or salad.
Notes
Pat the salmon very dry for the best sear. Don’t overcrowd the pan. Keep heat at medium-low when adding the sauce to prevent honey from burning. Prep all ingredients before starting as the recipe moves quickly.
