- Brie Wheel (8 oz)
- Aged Gouda (8 oz)
- Smoked Gouda (8 oz)
- Goat Cheese Log (4 oz)
- Prosciutto (6 oz)
- Sopressata (6 oz)
- Genoa Salami (6 oz)
- Black Grapes (1 cup)
- Dried Figs (1/2 cup)
- Fresh Pears (2, sliced)
- Pomegranate Seeds (1/2 cup)
- Roasted Red Peppers (1/2 cup)
- Black Olives (1/2 cup)
- Black Sesame Seeds (2 tbsp)
- Fig Jam or Blackberry Jam (1/2 cup)
- Honey (for drizzling)
- Edible Flowers (optional)
- Black Sesame Crackers (1 box)
- Baguette (1, sliced and toasted)
- Pita Chips (1 bag)
- Pretzel Sticks (1 bag)
Instructions
- Prepare the Goat Cheese ‘Dirt’ Log: Pour black sesame seeds onto a small plate. Roll the goat cheese log in the seeds until completely coated. Set aside.
- Prep the Brie: If serving warm, place brie in a small oven-safe dish and bake at 350°F for 10-12 minutes until soft and gooey. If serving cold, place on board as is.
- Slice the Meats: Gently separate prosciutto slices and loosely fold into ribbons or ‘ghost’ shapes. Cut sopressata into thin rounds. Cut salami into strips and curl into spirals.
- Prepare the Fruits & Veggies: Wash and dry grapes. Slice pears just before assembling (toss with lemon juice to prevent browning). Cut dried figs in half lengthwise. Drain olives and roasted red peppers.
- Arrange the Board: Place largest items (cheese wheels) first. Put brie in center-left, aged gouda and smoked gouda in opposite corners, and black sesame goat cheese log in a prominent spot.
- Add the Ramekins: Place small bowls of fig jam, honey, and olives in empty spaces between cheeses to act as anchors.
- Layer the Meats: Drape prosciutto ribbons near brie. Pile sopressata rounds and salami spirals in small clusters.
- Fill in with Crackers & Bread: Fan out black sesame crackers, pita chips, and pretzel sticks in small groups around the board. Place toasted baguette slices in a neat pile.
- Add the Fruits & Veggies: Scatter black grapes, dried figs, sliced pears, pomegranate seeds, and roasted red pepper strips in remaining gaps to fill empty spaces and add color.
- Final Touches: Drizzle honey over warm brie (if baked). Sprinkle extra pomegranate seeds over the board. Add edible flowers if using.
Notes
For best results, take cheeses out of fridge 30 minutes before serving. Warm brie last to keep it gooey. Use the ‘rule of threes’ when arranging items for visual appeal. Keep wet and dry ingredients separate to prevent sogginess. Slice pears at the last minute to prevent browning.
