Instructions

  1. Preheat oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Place pumpkin seeds in a colander and rinse under cool water, gently rubbing off large bits of pulp. Don’t worry about removing every string.
  3. In a medium saucepan, bring 4 cups of water to a rolling boil. Add 1 ½ teaspoons fine sea salt and stir to dissolve. Add rinsed seeds and boil for exactly 10 minutes.
  4. Drain seeds in the colander and spread them on a clean kitchen towel. Pat very dry and let air dry for 5 minutes.
