  • 1/2 cup unsalted butter (1 stick)
  • 1 large yellow onion, diced
  • 34 celery stalks, diced
  • 1 cup fresh cranberries, roughly chopped
  • 1 medium orange, zest and juice
  • 2 tablespoons fresh sage leaves, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1 1/2 to 2 cups low-sodium chicken or vegetable broth
  • 2 large eggs, lightly beaten
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional: 1/2 cup toasted pecans or walnuts
  • Optional: 1/2 pound cooked crumbled sausage

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut sourdough into 1-inch cubes (about 10 cups). Spread in a single layer on a large baking sheet. Bake for 10-12 minutes, stirring halfway, until lightly golden and dry. Set aside to cool.
  3. In a large skillet over medium heat, melt 1/2 cup butter. Add diced onion and celery; cook 6-8 minutes until soft and translucent. Add chopped sage, rosemary, and thyme; cook 1 minute until fragrant. Remove from heat.
  4. In a small bowl, whisk together broth, beaten eggs, orange juice (about 2 tablespoons), salt, and pepper.
  5. In a large mixing bowl, combine toasted sourdough cubes, sautéed onion-celery mixture, chopped cranberries, and orange zest. Toss gently to distribute evenly.
  6. Pour broth mixture over bread mixture, starting with 1 1/2 cups. Toss gently to coat. Add remaining broth if bread looks dry.
  7. Grease a 9×13-inch baking dish. Spoon stuffing into dish and spread evenly. If using optional add-ins, sprinkle on top.
  8. Bake for 30-35 minutes until top is golden brown and crispy. For extra crispiness, broil 2-3 minutes at the end.
  9. Let stuffing rest 5-10 minutes before serving.
