  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ¼ cup (½ stick) unsalted butter, softened
  • 1½ cups powdered sugar, sifted if lumpy
  • ¼ cup unsweetened cocoa powder
  • 23 tablespoons heavy cream
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • ¼ cup white frosting or melted white chocolate (for laces)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin tin with butter or non-stick spray.
  2. In a medium bowl, whisk together melted butter and granulated sugar until combined. Add eggs one at a time, whisking well after each, then stir in vanilla extract.
  3. In a separate small bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually add dry ingredients to wet, folding gently with a spatula until just combined. Do not overmix.
  4. Scoop batter into prepared mini muffin cups, filling each about ¾ full. Bake for 12-15 minutes, until a toothpick inserted into the center comes out with a few moist crumbs. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  5. While brownies cool, make frosting: In a medium bowl, beat softened butter with an electric mixer until smooth. Add powdered sugar, cocoa powder, 2 tablespoons heavy cream, vanilla, and salt. Beat on low until combined, then on medium-high for 2 minutes until light and fluffy. Add remaining cream if needed for desired consistency.
  6. Once brownies are completely cool, fit a piping bag with a small round tip and fill with chocolate frosting. Pipe a small oval shape onto each brownie bite, creating a football silhouette.
  7. Using white frosting or melted white chocolate, pipe two small curved lines down the center of each football, then add short cross-lines for laces. Let frosting set for about 10 minutes before serving.

Notes

Don’t overbake; brownies should be slightly underdone when removed from oven. Let brownies cool completely before frosting to prevent melting. Use room temperature eggs for best texture. If frosting is too soft, chill for 10 minutes before piping. Store in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days. Freeze unfrosted brownie bites for up to 3 months.
