Ingredients

  • 8 oz red bell pepper, sliced into strips
  • 6 oz salami or pepperoni
  • 4 oz dried cranberries or pomegranate seeds
  • 8 oz strawberries, halved (optional)
  • 8 oz sharp cheddar cheese, cubed
  • 4 oz yellow bell pepper, sliced
  • 1 cup goldfish crackers or cheddar coins
  • 4 oz honey or honeycomb
  • 1 cup yellow cherry tomatoes or golden beets, sliced thin
  • 8 oz cream cheese, softened
  • 1 cup mixed olives (green and black)
  • 1 cup grapes (red or green)
  • 8 oz crackers or crostini
  • 4 oz dark chocolate squares
  • Fresh herbs like rosemary or thyme for garnish
  • 1 large cutting board or wooden board (at least 18x12 inches)
  • Parchment paper or small ramekins for dips

Instructions

  1. Spread the softened cream cheese in a thin layer across the center of your board, leaving about 2 inches of bare board around the perimeter.
  2. Arrange the crackers in an oval shape around the cream cheese to create a football outline, leaving a gap at the top and bottom for the ‘laces’ later.
  3. Place the cheddar cubes in clusters along one side of the board, grouping them in threes and slightly overlapping.
  4. Fold the salami slices in half, then in half again, and arrange them in a fan pattern near the center. Alternatively, roll them into roses.
  5. Scatter the cherry tomatoes, bell pepper strips, and olives around the board in small clusters to create pockets of color.
  6. Fill any empty spaces with dried cranberries, goldfish crackers, and grapes, tucking them into crevices.
  7. Place small ramekins of honey or dip near the edges, and add dark chocolate squares in a small cluster near one corner.
  8. Create two parallel lines across the center of the board using thin strips of yellow bell pepper or a drizzle of honey to mimic football laces.
  9. Tuck small sprigs of rosemary or thyme around the board for a green accent.
  10. Serve immediately, ideally within an hour of assembly.

Notes

Use room temperature cheese for better flavor and easier cubing. Don’t skip the honey—it pairs beautifully with cheddar. Balance textures with crunchy, creamy, chewy, and fresh elements. Prep ingredients the night before for quick assembly on game day. If serving outdoors, place the board on a chilled baking sheet to keep ingredients cool.
