Juicy German Beer Brats simmered in a flavorful beer and onion bath, then seared to perfection. Topped with tangy sauerkraut, this is the ultimate comfort food for game day or Oktoberfest.

- 4–6 fresh bratwurst sausages
- 2 bottles (12 oz each) German-style beer (lager, pilsner, or Oktoberfest)
- 1 large yellow onion, thinly sliced
- 2 cups sauerkraut, drained
- 2 tablespoons unsalted butter
- 1 tablespoon whole grain mustard
- 4–6 hoagie or brat buns
- Salt and black pepper to taste
- Optional toppings: extra whole grain mustard, sliced pickles, spicy brown mustard, shredded Swiss cheese
Instructions
- Prep the onion and sauerkraut: Thinly slice the yellow onion into half-rings. Drain the sauerkraut in a colander and give it a quick rinse if you want a milder flavor. Set both aside.
- Start the beer bath: Place your large skillet or Dutch oven over medium heat. Pour in both bottles of beer and add the sliced onion. Bring it to a gentle simmer—not a rolling boil, just a lazy bubble.
- Add the brats: Gently place the raw bratwurst into the simmering beer and onion mixture. They should be mostly submerged. If not, add a splash of water or more beer. Let them simmer for 20 minutes, turning once halfway through.
- While brats simmer, warm the sauerkraut: In a small saucepan over low heat, add the drained sauerkraut and a splash of the beer mixture from the skillet. Let it warm through gently, about 5-7 minutes. Stir in the whole grain mustard just before serving.
- Remove brats and pat dry: After 20 minutes, use tongs to transfer the brats to a plate. Pat them dry with paper towels. This step is crucial—wet brats won’t sear properly. Reserve the beer and onions in the skillet.
- Sear the brats: Pour out most of the beer mixture from the skillet, leaving about 2 tablespoons of liquid and all the cooked onions. Add the butter to the skillet and turn the heat up to medium-high. Once the butter melts and sizzles, add the brats back in. Cook for 2-3 minutes per side, turning carefully with tongs, until deep golden brown with caramelized spots.
- Toast the buns (optional but worth it): While the brats sear, split your buns open and place them cut-side down in the skillet for about 30 seconds to soak up some of the buttery, beer-infused goodness.
- Assemble and serve: Place each brat in a bun. Top generously with the warm sauerkraut and some of the cooked onions from the skillet. Add extra mustard if desired. Serve immediately.
Notes
Don’t pierce the casings. Simmer gently, not boiling. Pat brats dry before searing for best browning. Let brats rest for a minute after searing before serving. For gluten-free, use gluten-free brats and buns, and a gluten-free lager.
