Ingredients
- 16 ounces cream cheese, softened to room temperature
- 1 cup sharp cheddar cheese, freshly shredded
- 1/2 cup pickled jalapenos, finely chopped and drained
- 1/4 cup green onions, thinly sliced (both white and green parts)
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper, freshly cracked

- 8 slices bacon, cooked until crispy and crumbled
- 1/2 cup pecans, toasted and finely chopped
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Soften the cream cheese: Take your cream cheese out of the fridge at least 30 minutes before you start. An hour is better. It needs to be soft enough that you can easily press your finger into it.
- Cook the bacon: While your cream cheese is softening, cook your bacon until it’s crispy. I prefer the oven method—lay the strips on a parchment-lined baking sheet and bake at 400°F for 15-18 minutes. No flipping needed. Let it cool completely on paper towels, then crumble it into fine pieces.
- Toast the pecans: If you’re using pecans, toast them in a dry skillet over medium heat for 3-4 minutes, stirring frequently. You’ll know they’re done when they smell nutty and have darkened slightly. Let them cool, then chop them finely.
- Mix the cheese base: In your large mixing bowl, beat the softened cream cheese with your hand mixer on medium speed until it’s smooth and fluffy—about 2 minutes. Scrape down the sides with your spatula. Add the shredded cheddar, chopped jalapenos (make sure they’re well-drained!), green onions, garlic powder, smoked paprika, black pepper, and that pinch of salt. Mix on low speed until everything is just combined.
- Chill the mixture: Scoop the cheese mixture onto a large piece of plastic wrap. Use the wrap to shape it into a rough ball, then wrap it tightly. Refrigerate for at least 1 hour. Overnight is even better—the flavors meld together beautifully.
- Shape the cheese ball: Once the mixture is firm, unwrap it and place it on a clean surface. Use your hands to shape it into a smooth, round ball. If the mixture starts getting too soft to handle, pop it back in the fridge for 15 minutes.
- Prepare the coating: In your shallow bowl or pie plate, combine the crumbled bacon, toasted pecans, and fresh parsley. Mix them together with your fingers so everything is evenly distributed.
- Coat the cheese ball: Roll the shaped cheese ball in the bacon mixture, pressing gently so the coating adheres. Use your hands to pat extra coating onto any bare spots.
- Final chill: Place the coated cheese ball on a serving plate or baking sheet and refrigerate for another 30 minutes before serving.
- Serve and enjoy: Let the cheese ball sit at room temperature for about 15 minutes before serving so it softens slightly. Serve with crackers, pretzels, celery sticks, or sliced baguette.
Notes
Don’t skip draining the jalapenos—they can make the cheese ball watery. For best texture, use room temperature cream cheese. The cheese ball can be made ahead (without coating) and refrigerated for up to 2 days; add coating just before serving. For a milder version, rinse pickled jalapenos or use canned green chiles. To freeze, wrap uncoated cheese ball tightly in plastic wrap and foil for up to 1 month; thaw overnight in fridge before coating.
