- 1 cup (240ml) vegetable oil
- 3 large eggs, at room temperature

- 3 cups peeled and chopped fresh apples (about 3 large apples, such as Honeycrisp or Fuji)

- 1 cup packed (200g) light brown sugar (for caramel)
- ½ cup (1 stick, 113g) unsalted butter (for caramel)
- ½ cup (120ml) heavy cream (for caramel)
- 1 teaspoon vanilla extract (for caramel)
- Pinch of salt (for caramel)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or nonstick spray.
- Peel, core, and chop 3 large apples into ½-inch chunks (about 3 cups). Set aside.
- In a large bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon salt, 2 teaspoons cinnamon, and ½ teaspoon nutmeg.
- In a separate medium bowl, whisk together 1 cup granulated sugar, 1 cup packed light brown sugar, 1 cup vegetable oil, 3 large eggs, and 2 teaspoons vanilla extract until smooth and slightly thickened.
- Pour the wet mixture into the dry mixture. Stir with a wooden spoon or spatula until just combined (a few streaks of flour are okay).
- Gently fold in the chopped apples and 1 cup chopped pecans or walnuts (if using). The batter will be very thick.
- Scrape the batter into the prepared pan and spread it evenly.
- Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan on a wire rack for 15 to 20 minutes.
- While the cake cools, make the caramel sauce: In a small saucepan over medium heat, combine 1 cup packed light brown sugar, ½ cup unsalted butter, and ½ cup heavy cream. Stir constantly until the butter melts and the sugar dissolves (about 3 to 4 minutes). Bring to a gentle simmer, let bubble for 1 minute without stirring, then remove from heat and stir in 1 teaspoon vanilla and a pinch of salt.
- Using a fork or skewer, poke holes all over the warm cake. Pour about half the warm caramel over the top, letting it soak in. Reserve the rest for serving.
- Let the cake sit for at least 10 minutes before slicing. Serve warm or at room temperature with extra caramel drizzled on top.
Notes
Don’t overmix the batter. Use room temperature eggs. Chop apples unevenly for better texture. Watch the caramel closely to avoid burning. Poke holes in the cake before adding caramel. Let the cake rest before slicing. The cake tastes even better the next day.
