  • 6 oz aged cheddar
  • 4 oz goat cheese log
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami (Genoa or soppressata)
  • 3 oz capicola (optional)
  • 2 large Honeycrisp apples
  • 1/2 cup dried figs
  • 1 cup red grapes
  • 1/2 cup pomegranate arils
  • 1/2 cup Marcona almonds
  • 1/2 cup candied pecans
  • 1 small crusty baguette
  • 1 box crackers (e.g., Milton’s or Raincoast crisps)
  • 1/4 cup local honey
  • 1/3 cup fig jam or apple butter
  • 23 fresh rosemary sprigs

Instructions

  1. Place small bowls or ramekins on the board. Fill one with honey, one with fig jam or apple butter, and one with pomegranate arils.
  2. Take brie out of refrigerator 20 minutes before serving. Slice aged cheddar into thin triangles or cubes. Slice goat cheese into rounds or leave whole.
  3. Arrange cheeses in different spots around the board, leaving space between each.
  4. Fold or roll prosciutto into loose ribbons. Fan salami slices or stack in a small pile. Place capicola in a separate spot.
  5. Core and slice Honeycrisp apples thinly (about 1/4 inch thick). Toss with lemon juice to prevent browning if desired. Fan slices near brie and cheddar.
  6. Scatter dried figs, red grapes, and pomegranate arils around the board. Add Marcona almonds and candied pecans in small piles.
  7. Slice baguette into thin rounds and arrange near the edge of the board. Fan out crackers in a separate spot.
  8. Drizzle honey over brie and goat cheese. Tuck fresh rosemary sprigs around the board for garnish. Adjust arrangement as needed.

Notes

Let cheeses come to room temperature for best flavor. Slice apples right before serving to prevent browning. Don’t overcrowd the board; leave negative space. Use the ‘three of everything’ rule for visual balance. Store leftovers separately: wrap cheeses in wax paper, meats in airtight container, apples with lemon juice in sealed bag, crackers and nuts in airtight containers at room temperature.
