  • 1 small seedless watermelon (about 4 cups cubed)
  • 8 ounces feta cheese (block form, not pre-crumbled)
  • 1/2 cup fresh mint leaves (loosely packed)
  • 2 tablespoons extra virgin olive oil (optional)
  • 1/2 teaspoon flaky sea salt (optional)
  • Balsamic glaze for drizzling (optional)
  • 2430 toothpicks or small skewers

Instructions

  1. Prep the Watermelon: Slice off both ends of the watermelon so it sits flat. Cut away the rind in strips, removing all white parts. Cut into 1-inch thick slices, then into 1-inch strips, and finally into 1-inch cubes. Place cubes in a single layer on a paper towel-lined baking sheet and pat dry gently. Let sit for 5 minutes.
  2. Cube the Feta: Pat the feta dry with a paper towel. Cut into ¾-inch cubes. Place on a plate and set aside. Keep refrigerated until ready to assemble.
  3. Prepare the Mint: Rinse mint leaves under cold water and pat completely dry. Pick the largest leaves for skewers; leave them whole.
  4. Assemble the Skewers: Thread a cube of watermelon onto a toothpick, followed by a mint leaf (fold in half if large), then a cube of feta. Push together gently. Repeat with remaining ingredients to make 24-30 skewers.
  5. Finish and Garnish: Arrange skewers on a serving platter. Drizzle lightly with olive oil if using, sprinkle with flaky sea salt, and drizzle with balsamic glaze in a thin zigzag pattern if desired.
  6. Serve Immediately: Best served within 30 minutes of assembling. If bringing to a party, assemble right before leaving or keep components separate and assemble at the destination.

Notes

Don’t skip drying the watermelon—wet cubes make everything slide off the toothpick. Cut watermelon and feta the same size (about ¾ to 1 inch) for perfect balance. Keep feta cold until the last minute. Handle mint gently to avoid bruising. For best results, use block feta, not pre-crumbled. These skewers are best served within 30 minutes of assembling; the watermelon releases water after about an hour.
