- 3 pounds chicken wings (about 15–18 whole wings, or 30–36 drumettes and flats)
- 1 tablespoon baking powder (NOT baking soda)
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 cup honey
- 1–2 habanero peppers (seeds removed for less heat, keep them for more fire)
- 3 tablespoons unsalted butter
- 2 tablespoons soy sauce (low sodium works great)
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 tablespoon lime juice (fresh squeezed)
- Pinch of salt
- Fresh cilantro, chopped (for garnish, optional)
- Thinly sliced green onions (for garnish, optional)
- Lime wedges (for garnish, optional)
- Toasted sesame seeds (for garnish, optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top.
- If wings aren’t already cut, separate them at the joint between drumette and flat, discarding wing tips. Pat wings completely dry with paper towels.
- In a large bowl, mix baking powder, salt, garlic powder, black pepper, and smoked paprika. Add dried wings and toss until evenly coated.
- Arrange wings in a single layer on the wire rack, ensuring they are not touching. Bake for 20 minutes.
- Flip each wing using tongs and bake for another 15 minutes, until golden brown and crispy. If needed, bake an additional 5 minutes.
- While wings bake, make the glaze: Finely mince habanero pepper. In a small saucepan over medium heat, melt butter. Add minced habanero and garlic, cook for 1 minute until fragrant.
- Add honey, soy sauce, apple cider vinegar, lime juice, and a pinch of salt. Stir and bring to a gentle simmer. Let simmer for 3-4 minutes until slightly thickened and glossy. Taste and adjust heat or sweetness as desired. Remove from heat.
- When wings are done after 35 minutes, brush with about half the glaze. Return to oven and bake for another 5 minutes to set the first layer.
- Remove wings from oven and brush with remaining glaze. Transfer to a serving platter.
- Sprinkle with fresh cilantro, sliced green onions, and toasted sesame seeds if using. Squeeze fresh lime juice over the top. Serve immediately with extra lime wedges.
Notes
Don’t skip drying the wings thoroughly for crispy skin. Use baking powder, not baking soda. Wear gloves when handling habaneros to avoid skin irritation. Double glazing is key for a sticky, glossy finish. Let wings rest 2-3 minutes after glazing before serving.
