Instructions

  1. Cut the brioche or challah into 1-inch cubes and spread evenly in a 9×13-inch baking dish. If bread is fresh, let it sit out uncovered for about an hour to dry slightly.
  2. In a large mixing bowl, whisk the eggs until fully combined. Add eggnog, whole milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt. Whisk until sugar is dissolved and mixture is smooth and pale golden brown.
  3. Pour the custard evenly over the bread cubes. Gently press the bread down with a spatula or your hands to ensure all pieces are coated. Cover tightly with plastic wrap and refrigerate for at least 6 hours or overnight (8-12 hours ideal).
  4. When ready to bake, preheat oven to 350°F (175°C). Remove casserole from fridge and let sit on counter for 15 minutes to take off the chill. Uncover, brush top with melted butter, and sprinkle with turbinado sugar if using.
  5. Bake for 40-45 minutes, until top is golden brown and center is set. A knife inserted into the center should come out clean or with a few moist crumbs. Edges should be caramelized and slightly crispy.

Notes
