Description
These no-bake energy bites are chewy, just sweet enough, and packed with chocolate chips. Made with simple pantry staples like oats, peanut butter, and honey, they come together in under 20 minutes and are perfect for busy days, lunchboxes, or road trips.

- 1 cup old-fashioned rolled oats
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1/2 cup mini chocolate chips
- 1/4 cup ground flaxseed
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons chia seeds (optional)
- 1–2 tablespoons water (if needed)
Instructions
- Pulse the oats (optional but recommended). Add half the oats to a food processor and pulse 4-5 times until they resemble a coarse flour. Transfer to a large mixing bowl and add the remaining whole oats.
- Combine the wet ingredients. In the same mixing bowl, add the peanut butter, honey, and vanilla extract. Stir vigorously with a spatula until the peanut butter is evenly distributed. The mixture should start coming together after about 30 seconds of stirring.
- Add the dry ingredients. Sprinkle in the ground flaxseed, chia seeds (if using), and salt. Stir again until everything is evenly combined. The mixture should feel slightly sticky but hold together when pressed between your fingers.
- Fold in the chocolate chips. Add the mini chocolate chips and fold gently until they are evenly distributed.
- Check the consistency. Squeeze a small amount of the mixture in your palm. If it holds together without crumbling, you are good. If it falls apart, add 1 tablespoon of water at a time until it binds.
- Chill the mixture (optional but helpful). Pop the bowl in the fridge for 15-20 minutes. This makes rolling easier and prevents sticky fingers.
- Roll into bites. Using a small cookie scoop or a tablespoon, scoop out portions of the mixture and roll them between your palms into smooth balls. Aim for about 1 inch in diameter. You should get 18-22 bites depending on size.
- Place on a baking sheet. Line a baking sheet or large plate with parchment paper and arrange the bites in a single layer.
- Chill for at least 30 minutes. This step is non-negotiable. The bites need time to firm up and hold their shape.
- Transfer to an airtight container. Once firm, move the bites to a container with a tight-fitting lid. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
Notes
For best texture, use room temperature peanut butter. If mixture is too sticky, add a tablespoon of oats; if too dry, add a teaspoon of honey or water. Wet your hands slightly to prevent sticking when rolling. The flavors improve after a day in the fridge.
