  • 4 cloves garlic, minced

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • 1 bunch asparagus (about 1 pound)
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Zest of ½ lemon
  • Fresh parsley, chopped
  • Lemon wedges
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line your sheet pan with parchment paper or foil.
  2. Prepare the asparagus: Wash and snap off woody ends. Toss with 1 tablespoon olive oil, ¼ teaspoon salt, and ⅛ teaspoon pepper. Spread in a single layer on one side of the prepared sheet pan.
  3. Make the garlic butter: In a small bowl, combine 3 tablespoons melted unsalted butter, 4 minced garlic cloves, 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, ½ teaspoon salt, ¼ teaspoon pepper, and ¼ teaspoon paprika. Whisk until well combined. Set aside.
  4. Prep the salmon: Pat the salmon filets dry with paper towels. Place skin-side down on the other side of the sheet pan, leaving space between each piece.
  5. Roast the asparagus first: Place the sheet pan with just the asparagus in the oven for 5 minutes.
  6. Add the salmon: After 5 minutes, pull the pan out and place the salmon filets on the empty side. Spoon about half the garlic butter mixture over the salmon. Return the pan to the oven.
  7. Roast for 10-12 minutes, until salmon is opaque and flakes easily with a fork (internal temperature of 125°F to 130°F).
  8. Optional: Broil for 1-2 minutes for a golden crust.
  9. Finish with remaining garlic butter: Drizzle reserved garlic butter over the salmon and asparagus.
  10. Garnish and serve: Sprinkle fresh parsley and lemon zest over everything. Serve with lemon wedges.

Don’t crowd the pan; use two pans if needed. Watch the garlic to avoid burning. Let salmon sit at room temperature for 10-15 minutes before cooking. Pat salmon dry for best results. For consistent cooking, use salmon filets of similar thickness.
