Description
These golden, flaky puff pastry cups filled with melted brie and tangy cranberry sauce are the ultimate party appetizer. Quick to make and impossible to resist, they’ll disappear faster than anything else on the table.
Ingredients
- 1 package (17.3 ounces) frozen puff pastry sheets, thawed
- 8 ounces brie cheese, rind removed and cut into ½-inch cubes
- ½ cup whole berry cranberry sauce
- 2 tablespoons fresh rosemary, finely chopped
- 1 large egg, beaten with 1 tablespoon water
- Flaky sea salt (optional, for garnish)
- Fresh thyme sprigs (optional, for garnish)
- Honey drizzle (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Lightly flour your work surface and unfold one sheet of puff pastry. Roll it out slightly to smooth the seams, but don’t go thinner than about ⅛ inch.
- Using a 2-inch cookie cutter, cut out as many rounds as you can from the first sheet (about 12 rounds). Gather scraps, press together gently, and re-roll to cut more rounds. Repeat with the second sheet for about 24 rounds total.
- Gently press each pastry round into the cups of a mini muffin tin, making sure the pastry goes all the way up the sides. Don’t stretch the pastry.
- Pre-bake the empty pastry cups for 5 minutes. Remove from oven and use the back of a small spoon to gently press down the puffed centers to create a well.
- Place 2-3 cubes of brie into each pastry cup (about ½ ounce per bite).
- Spoon about 1 teaspoon of cranberry sauce on top of the brie. If cranberry sauce has large berries, give them a rough chop first.
- Evenly distribute the chopped rosemary over all the bites.
- Using a pastry brush, gently brush the exposed pastry edges with the beaten egg.
- Bake for 12-15 minutes until the pastry is deep golden brown and the cheese is melted and bubbly.
- Let the bites cool in the pan for 5 minutes. Use a small offset spatula or butter knife to gently lift them out.
- Sprinkle with flaky sea salt if using, and arrange on a serving platter. Serve warm.
Notes
Pre-baking the pastry cups before adding the filling prevents sogginess. For best results, use cold but pliable puff pastry and avoid overworking it. If pastry browns too quickly, tent loosely with foil. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 350°F oven for 5-7 minutes. Unbaked bites can be frozen for up to 2 months.
