Description
These skewers combine warm, smoky charred peaches with cold, creamy burrata and fresh basil, drizzled with balsamic glaze. They’re a quick, easy, and impressive appetizer perfect for summer entertaining.

- 4 ripe but firm peaches
- 8 ounces burrata cheese
- 1/4 cup fresh basil leaves (about 12–16 large leaves)
- 2 tablespoons balsamic glaze
- 1 tablespoon extra-virgin olive oil
- Flaky sea salt, to taste
- Freshly cracked black pepper, to taste (optional)
- 1 cup balsamic vinegar (for homemade glaze)
- 2 tablespoons honey or brown sugar (for homemade glaze)
Instructions
- Wash and pat dry peaches. Cut each peach in half, remove pit, then slice each half into 4 wedges (32 total). Pat wedges dry with a paper towel.
- Place peach wedges in a bowl, drizzle with 1 tablespoon olive oil, and toss gently. Sprinkle with a pinch of flaky salt.
- Thread 4-5 peach wedges onto each skewer, leaving space between pieces. You should get 6-8 skewers.
- Preheat grill or grill pan to medium-high heat (400-450°F).
- Place skewers on grill grates. Cook for 2-3 minutes per side until char marks appear and peaches soften slightly. Do not move them too much.
- Remove skewers from grill and let rest for 2-3 minutes.
- While peaches rest, remove burrata from fridge. Cut or tear into bite-sized pieces (about 1-inch chunks).
- Add burrata pieces between peach wedges on each skewer, or place burrata on top of skewers on serving platter.
- Drizzle assembled skewers with balsamic glaze. Tear fresh basil leaves and scatter over top. Finish with flaky sea salt and black pepper.
- Serve immediately while peaches are warm and burrata is cold.
Notes
Soak wooden skewers in water for 30 minutes before grilling to prevent burning. For best results, use ripe but firm peaches and let grilled peaches cool slightly before adding burrata to prevent melting. Homemade balsamic glaze can be made by simmering 1 cup balsamic vinegar with 2 tablespoons honey or brown sugar until reduced by half.
