  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon

  • For the coating: ¼ cup (50g) granulated sugar + 1 tablespoon ground cinnamon

Instructions

  1. Brown the butter: Cut the butter into tablespoon-sized pieces and place in a light-colored saucepan over medium heat. Stir frequently until the butter melts, foams, then turns a deep amber color with brown specks and a nutty aroma (about 5-7 minutes). Immediately remove from heat and pour into a large mixing bowl, including all brown bits. Let cool for 5-10 minutes until warm but not hot.
  2. Mix the wet ingredients: Add granulated sugar and brown sugar to the warm browned butter. Whisk until combined. Add pumpkin puree, egg, and vanilla extract. Whisk vigorously until smooth, glossy, and well combined.
  3. Combine the dry ingredients: In a separate medium bowl, whisk together flour, cream of tartar, baking soda, salt, cinnamon, and pumpkin pie spice until no lumps remain.
  4. Fold the dry into the wet: Add dry ingredients to the wet mixture all at once. Use a rubber spatula to fold gently until just combined and no streaks of flour remain. The dough will be soft and slightly sticky.
  5. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  6. Shape the cookies: In a small shallow bowl, mix together ¼ cup granulated sugar and 1 tablespoon cinnamon for the coating. Using a 1.5-tablespoon cookie scoop or two spoons, portion the dough. Roll each portion into a smooth ball, then roll in the cinnamon-sugar mixture to coat evenly. Place on prepared baking sheets, spacing about 2 inches apart.
