  • Author: Sarah Wasserman
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

A quick and easy baked crack chicken casserole featuring crispy bacon, creamy cheese, and a tangy ranch seasoning, perfect for comforting family dinners.

Ingredients

Scale
  • 3 cups cooked chicken, shredded or cubed (rotisserie chicken works well)
  • 8 slices bacon, cooked until crisp and chopped
  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • 1 packet (about 1 ounce) ranch seasoning mix or homemade blend
  • 2 cups shredded sharp cheddar cheese
  • 2 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • Optional: handful of chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels and chop into bite-sized pieces. Set aside a small handful for topping.
  3. In a large mixing bowl, combine softened cream cheese, sour cream, and ranch seasoning. Blend until smooth and creamy, about 2 minutes.
  4. Stir in cooked shredded chicken, garlic powder, and black pepper until thoroughly coated.
  5. Fold in 1½ cups shredded cheddar cheese and sliced green onions, reserving ½ cup cheddar cheese for topping.
  6. Spread the mixture evenly into a 9×13-inch casserole dish, pressing down gently to level the surface.
  7. Sprinkle the remaining ½ cup cheddar cheese and reserved bacon pieces evenly over the top.
  8. Bake for 25-30 minutes until the cheese is golden, bubbly, and edges are slightly browned.
  9. Remove from oven and let rest for 5 minutes before serving.
  10. Garnish with chopped fresh parsley if desired and serve.

Notes

Use room temperature cream cheese for a smooth sauce. Crisp bacon thoroughly for best texture. If casserole seems watery, pat chicken dry before mixing. For extra crispy bacon topping, broil for 1-2 minutes at the end, watching closely to avoid burning. Can be assembled up to 24 hours ahead and refrigerated before baking. Leftovers keep well refrigerated for up to 3 days and reheat best in oven to maintain crispiness.
