Ingredients

  • 1 ripe banana, mashed
  • 1 large egg
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon honey or maple syrup
  • 1/4 cup vanilla or unflavored protein powder
  • 2 tablespoons almond flour or oat flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Optional: 1 tablespoon chocolate chips or chopped peanuts

Instructions

  1. Mash the banana in a small bowl until mostly smooth.
  2. Add the egg, peanut butter, and honey (or maple syrup). Stir until well combined.
  3. Sprinkle the protein powder, almond flour (or oat flour), baking powder, and salt over the wet mixture. Stir gently until just combined. Fold in chocolate chips or chopped peanuts if using.
  4. Transfer the batter to a microwave-safe mug (about 12 ounces). Smooth the top.
  5. Microwave on high for 60-90 seconds, starting to check at 60 seconds. The muffin should be puffed and firm to the touch.
  6. Let the muffin cool in the mug for about 1 minute before eating.
  7. Enjoy straight from the mug or turn out onto a plate. Optionally, drizzle with extra peanut butter or add banana slices.

Notes

For best results, use a very ripe banana. Microwave wattages vary; start checking at 60 seconds. Let the muffin cool for 1 minute before eating to allow it to set. If making multiple, cook one at a time or bake in a mini muffin tin at 350°F for 8-10 minutes.
