Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tins or cake pans.
  2. In a large bowl, whisk together 2 cups (240g) of all-purpose flour, 1 tsp baking powder, and 1/2 tsp salt.
  3. In another bowl, beat 1 cup (230g) of unsalted butter with 1 1/2 cups (300g) of granulated sugar until fluffy (about 2-3 minutes).
  4. Beat in 3 large eggs, one at a time, ensuring each is fully incorporated.
  5. Slowly add the dry mixture to the wet, alternating with 1 cup (240ml) of milk. Stir in 1 tsp vanilla extract.
