Description
This vibrant rainbow fruit salsa is a colorful, refreshing dish perfect for summer brunches. Packed with a medley of fruits, a touch of citrus, and natural sweetness, it’s a crowd-pleaser that’s as beautiful as it is delicious.
Ingredients
Scale
- 1 cup strawberries, diced
- 1 cup mango, diced
- 2 kiwis, diced
- 1 cup blueberries
- 1 cup pineapple, diced
- 2 tablespoons lime juice, freshly squeezed
- 2 tablespoons mint leaves, chopped
- 1 tablespoon honey (optional, or maple syrup for vegan option)
Instructions
- Wash all the fruits thoroughly and pat them dry with a clean kitchen towel.
- Dice the strawberries, mangoes, kiwis, and pineapple into small, uniform pieces (about ½ inch in size).
- Add the blueberries whole to the mix.
- Drizzle the freshly squeezed lime juice over the fruits to enhance flavor and prevent browning.
- Sprinkle the chopped mint leaves and add honey (if using). Gently toss everything to combine.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Transfer the salsa to a serving dish and pair it with cinnamon pita chips, or serve it on its own. Enjoy!
Notes
For best results, use ripe but firm fruits to avoid a mushy texture. Chill the salsa before serving to enhance the flavors. If making ahead, add the lime juice and mint just before serving to keep the flavors fresh.
