Ingredients

  • 16 ounces (454g) cream cheese, softened
  • 1 vanilla bean or 1 teaspoon vanilla bean paste
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1/4 cup (60g) sour cream
  • 1 tablespoon (15ml) lemon juice
  • 1 cup (120g) graham cracker crumbs
  • 3 tablespoons (42g) melted butter

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a mini muffin tin or line it with paper liners.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Stir until the crumbs are evenly moistened.
  3. Press about 1 teaspoon of the crumb mixture into the bottom of each muffin cup to form the crust. Use the back of a spoon to flatten it. Bake for 5 minutes, then let cool.
  4. In a large bowl, beat softened cream cheese with granulated sugar until smooth. Scrape down the sides as needed.
  5. Scrape the seeds from the vanilla bean and add them to the cream cheese mixture. Alternatively, use vanilla bean paste.
  6. Mix in eggs, one at a time, followed by sour cream and lemon juice. Beat until the batter is creamy and well blended.
  7. Spoon the cheesecake batter over the crusts, filling each cup almost to the top.
  8. Bake the bites for 15-18 minutes or until the centers are set but still slightly jiggly. Cool completely at room temperature, then refrigerate for at least 2 hours before serving.
  9. Optional: Decorate with whipped cream, fresh berries, or chocolate drizzle before serving.

Notes

Allow all ingredients to reach room temperature before mixing for a smoother batter. Chill thoroughly before serving for the best texture. Experiment with toppings like caramel sauce, crushed nuts, or edible flowers for a fancy touch.
