  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp (30 g) powdered sugar
  • 2 tbsp (30 g) strawberry jam

Instructions

  1. Prepare the Filling: In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Stir in strawberry jam. Chill the filling for at least 30 minutes.
  2. Make the Cookie Dough: In a mixing bowl, cream butter, granulated sugar, and brown sugar until fluffy. Beat in egg and vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
  4. Shape the Dough: Scoop about 2 tbsp of dough and flatten it slightly. Add 1 tsp of the cheesecake filling to the center. Wrap the dough around the filling and seal well, forming a ball.
  5. Chill the Cookie Dough: Place the dough balls on a parchment-lined baking sheet and chill for 30 minutes.
  6. Bake: Preheat your oven to 350°F (175°C). Bake the cookies for 12-14 minutes or until the edges are lightly golden. Cool completely on a wire rack.

Notes
