- 4 yellow onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 4 cups beef broth (or vegetable broth for vegetarian version)
- 12 ounces (340 g) pasta (fettuccine, linguine, or spaghetti)
- 1 1/2 cups grated Gruyère cheese
- Fresh thyme leaves
- Salt and pepper to taste
Instructions
- Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large pot over medium heat. Add 4 thinly sliced yellow onions and a pinch of salt. Cook, stirring occasionally, for about 25-30 minutes until the onions are golden and caramelized.
- Stir in 2 cloves of minced garlic and cook for 1 minute. Pour in 1/2 cup of dry white wine to deglaze the pot, scraping up any browned bits. Let it simmer for 2-3 minutes.
- Pour in 4 cups of beef broth and bring to a boil. Add 12 ounces of pasta and reduce the heat to a simmer. Cook, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed (about 10-12 minutes).
- Remove the pot from heat and stir in 1 1/2 cups of grated Gruyère cheese. Toss until the pasta is coated in a creamy, cheesy sauce.
- Add fresh thyme leaves and season with salt and pepper to taste. Serve immediately, garnished with extra cheese if desired.
Notes
Be patient while caramelizing the onions for the best flavor. Stir often to prevent burning, and taste as you go to adjust seasoning. For a vegetarian version, use vegetable broth and plant-based cheese.
