- 1 cup (250g) peanut butter
- 2 cups (160g) old-fashioned oats
- 2 cups (250g) all-purpose flour
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (175g) chocolate chips
- 1 cup (175g) candy-coated chocolates
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving a slight overhang for easy lifting.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Mix in the peanut butter, eggs, and vanilla extract until fully combined.
- Gradually add the all-purpose flour, baking soda, and salt. Stir in the oats until evenly distributed.
- Gently fold in the chocolate chips and candy-coated chocolates, saving a handful for sprinkling on top.
- Press the dough evenly into the prepared pan. Sprinkle the reserved mix-ins over the top.
- Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
- Let the bars cool completely in the pan before lifting them out and slicing into squares.
Notes
For clean cuts, chill the bars for 15-20 minutes before slicing. Customize with your favorite mix-ins, but keep the total to 1-1.5 cups to avoid crumbly bars.
